Homemade Apple Cider Vinegar

Yield: 1½–2 gallons
Ingredients
- Scraps from 10–15 apples (peels, cores, even unfinished ones)
- 1 cup raw cane sugar (optional but will kickstart fermentation- the sugar will be turned into alcohol)
- Filtered water
- Optional: 2 Tbsp raw, unfiltered ACV (as a starter)
Instructions
- Fill a 2-gallon glass jar ¾ full with apple scraps.
- Dissolve sugar into enough filtered water to cover the apples completely.
- Pour over the apples, making sure they stay submerged.
- Cover with cheesecloth and secure with a rubber band.
- Ferment in a dark, room-temp space for 2–3 weeks, stirring daily.
- Strain out apples and return liquid to jar. Cover again and ferment 2–4 more weeks.
- When it smells tangy and tastes vinegary, bottle and store!

Mayonnaise
Making your own mayonnaise at home is surprisingly simple and results in a fresh, flavorful condiment that surpasses store-bought options.
Ingredients
1 large egg (at room temperature)
¾ cup extra virgin olive oil (cold pressed is best)
1 tablespoon fresh lemon juice or white wine vinegar
1 teaspoon Dijon mustard
½ teaspoon salt (or to taste)
¼ teaspoon ground black pepper (optional)
Optional: a pinch of sugar to balance the acidity
Instructions
Gather ingredients at room temperature: This ensures optimal emulsification.
Combine ingredients in a tall container: In a container that fits the immersion blender head, add the egg, lemon juice, mustard, salt, and pepper (if using).
Pour oil over the mixture: Gently pour the oil over the other ingredients and let it settle for about 15 seconds.
Immerse the blender and blend without moving: Place the immersion blender firmly on the bottom of the container, covering the egg yolk. Turn it on high and hold it still for 10-15 seconds until a thick, creamy mayonnaise starts to form at the bottom.
Slowly lift and incorporate: Once a stable base has formed, slowly lift and move the immersion blender up and down to incorporate the remaining oil until the mayonnaise is thick and creamy throughout.
Taste and adjust: Taste the mayonnaise and adjust the seasoning with additional salt, lemon juice, or sugar if needed.
Store and Enjoy
Transfer the mayonnaise to a clean, airtight container and refrigerate. It can last in the fridge for up to 2 weeks, although some recommend consuming it within a shorter timeframe, such as a week or less.

Homemade Electrolyte Drink Recipe
Making your own electrolyte drink at home offers several advantages, such as controlling the ingredients, customizing the flavors and sweetness, and often being more cost-effective than store-bought options. You can also use natural ingredients, potentially boosting your drink’s antioxidant content with fruits or adding ingredients like ginger for digestive support.
Here’s a basic recipe, and you can explore different flavor variations:
2 cups water
2 tbsp lemon juice
1/4 tsp sea salt or Himalayan pink salt
2 tsp raw honey or maple syrup (optional, adjust to taste)
Ice cubes (optional)
Instructions
Combine the water, lemon juice, salt, and optional sweetener in a pitcher or glass.
Stir well until the salt and sweetener (if using) are fully dissolved.
Add ice cubes if desired.
Taste and adjust the sweetness or saltiness according to your preference.
Other Variations and Additions
Coconut water base: Replace some or all of the water with unsweetened coconut water for a natural source of potassium.
Fruit infusions: Add frozen fruit, such as strawberries, blueberries, or mango, during blending for a fruitier taste and additional antioxidants.
Ginger or mint: Grate some fresh ginger or add fresh mint leaves for an added flavor and potential digestive benefits.
Magnesium: If you’re concerned about magnesium deficiency, you can consider adding magnesium powder or drops, according to the instructions on the product packaging.
Important Considerations

While homemade electrolyte drinks are generally safe and beneficial, they should not replace oral rehydration solutions (ORS) for severe dehydration caused by illnesses like vomiting or diarrhea.
